      Borgata Hotel Casino & Spa announced Shawn Dore as new Wine Director

Borgata’s Sisterhood of Five Female Sommeliers Oversees Atlantic City’s Most Extensive Wine Program

Atlantic City, NJ, August, 2004

Borgata Hotel Casino & Spa already boasts the largest wine cellar in Atlantic City. Today, with the announcement of Shawn Dore as Borgata’s new Wine Director, the upscale 2,000-guest room and suite property ‚ a $1.1 billion joint venture between Boyd Gaming Corporation and MGM MIRAGE ó is now home to one of the strongest sisterhoods of sommeliers in the country.

An award-winning sommelier from Toronto, Canada, Dore joins Borgata after four years as the owner of Sommelier Services, a wine and beverage consulting firm. Named to Wine Spectator’s Top 100 list in 2001, 2002 and 2003, she has shaped the wine selection at some of Toronto’s top restaurants, including Accolade and Le Bar at the Crowne Plaza Hotel Toronto Center and the Prime Restaurants group, where she created a multi-million-dollar national wine program for 149 franchised and corporately owned restaurants. In addition, she created the education standard for East Side Mario’s, Prime’s largest national chain of 90 restaurants.

Considered one of the top educators in the industry, Dore will be sharing her philosophy of wine with the staff and guests at Borgata’s 11 destination restaurants. Often quoted as saying, “My philosophy is very simple: Drink what you enjoy,” Dore believes that wine should be fun, not intimidating. A recipient of the Wine Diploma from the Wine and Spirit Education Trust in the United Kingdom, Dore gained Sommelier certification with the prestigious Sommelier Guild of Canada, and is a candidate of the Advanced Master Sommelier program.

In addition to Dore, Borgata’s Women in Wine include:
  • Inez Ribustello, previously Borgataís wine director who now serves as a consultant
  • Gail Stein-Lutz, sommelier at Old Homestead Steakhouse
  • Elizabeth Cahill, sommelier at Suilan by Susanna Foo
  • Sharon Scarella, sommelier at Chef Luke Palladino’s Specchio and Ombra restaurants
Dore will continue to grow and develop the wine program at Borgata’s existing restaurants, exploring the world’s many beloved wine regions as well as lesser-known locales, as well as plan for Borgata’s expansion in 2006, when an additional five restaurants and two bars will be added to the property, in addition to a 100-table poker room, a 100-seat simulcast facility (race book), 20 additional table games, 700 additional slots, and a 30 percent expansion of the hotel’s spa.

Borgata is a joint venture of Boyd Gaming Corporation (NYSE: BYD) and MGM MIRAGE (NYSE: MGG). Located at Renaissance Pointe in Atlantic City, it features 2,000 guest rooms and suites, 125,000 square feet of gaming tables, 3,600 slot machines, 11 destination restaurants, 11 retail boutiques, a 50,000-square-foot spa, 70,000 square feet of event space, and parking for 7,100 cars.
